After the oven

Cool and slice confidently, choose storage for your bread and turn suitable leftovers into another meal.

LESSON 1 OF 4 · 6 min read

Let the loaf finish cooling

A loaf continues to settle after it leaves the oven. Cooling is part of the recipe.

Go to guided practice & lesson check

Let’s work through it

  1. Transfer bread to a rack so air can circulate beneath it. Follow your pan recipe’s resting instructions before removing delicate enriched bakes.
  2. Wait until a full loaf has cooled throughout before slicing; at least two hours is a useful starting point for a typical artisan loaf, and larger loaves may take longer.
  3. Do not wrap bread while it is steaming. Trapped moisture can soften the crust and leave condensation.
  4. Judge the crumb only after cooling. A warm slice can look gummy even when the loaf was baked adequately.

LEARN IT. TRY IT. MAKE IT YOURS.
