Seeds, grains & deeper flavor

Develop an inclusion plan that accounts for moisture, weight and structure.

LESSON 1 OF 4 · 6 min read

Treat seeds as ingredients

A handful of seeds changes the formula in ways worth measuring.

Go to guided practice & lesson check

Let’s work through it

  1. Record each seed by weight and note whether it is whole, ground, raw or toasted. Those forms do not behave identically.
  2. Calculate the total seed weight relative to the formula’s flour. Start with the recipe’s amount before increasing it.
  3. Keep nuts and seeds out of a loaf when an intended eater cannot have them; a shared kitchen is not automatically allergen-free.

LEARN IT. TRY IT. MAKE IT YOURS.
