Lesson 2 of 4
Set up before you mix
Preparing ingredients and equipment reduces mistakes when your hands are covered in dough.
Ingredients for this learning path
- Your familiar loaf formula
Equipment
- Notebook or academy journal
- Scale
- Thermometer
- Timer
The lesson
- Read the whole recipe, including its starter hydration, before weighing anything. Check that your cookware fits the oven and its temperature rating suits the bake.
- Weigh ingredients into separate containers or use the scale tare function carefully. Label held-back water so it does not get forgotten.
- Set out the scraper, cover and a place to record temperatures. Mark the dough container starting level immediately after mixing.
- Set reminders for folds, but stop and reassess if dough strength or temperature calls for a different approach.
The baker’s note
A timer reminds you to observe; it does not decide whether the dough is ready.
Practice
Prepare your station using the kit-readiness checklist, then note anything missing.
Technique lessons may require a separate complete formula. Read the full path before mixing.
