Baker’s math, made simple

Calculate hydration, salt and starter contributions without losing track of the whole dough.

LESSON 4 OF 4 · 6 min read

Read a formula before you mix

A short audit catches many baking mistakes before they reach the bowl.

Go to guided practice & lesson check

Let’s work through it

  1. Identify whether flour and water listed include or exclude the starter. Look for any held-back water, soaker or tangzhong.
  2. Check the intended yield, portion weights, pan size and starter hydration. Add the dough weights to confirm they support the stated yield.
  3. If you change an ingredient, write exactly what it contributes and what it replaces. A wet purée is not equivalent to dry spice.

LEARN IT. TRY IT. MAKE IT YOURS.
