Biscuits & gentle layers

Make a small batch of tender biscuits while controlling mixing, cutting and heat.

LESSON 2 OF 4 · 6 min read

Fold without kneading

A few deliberate folds organize the dough without treating it like a yeast bread.

Go to guided practice & lesson check

Let’s work through it

  1. Tip the shaggy dough onto a lightly floured bench and press it together gently.
  2. Pat into a rectangle, fold into thirds, turn and repeat once or twice. Stop if the dough becomes warm or elastic.
  3. Pat to an even thickness of about 2 cm. Keep bench flour light so it does not build dry layers.

LEARN IT. TRY IT. MAKE IT YOURS.
