Lesson 1 of 4
Choose your texture first
A useful experiment begins with a specific goal: thinner, thicker, crisper or chewier.
Ingredients for this learning path
- A complete cookie formula
- Its specified flour, sugar, fat, eggs and inclusions
Equipment
- Scale
- Portion scoop
- Light-colored baking sheet
- Cooling rack
The lesson
- Bake a baseline batch exactly as written. Record butter state, dough temperature, portion weight and any chilling time.
- Cool fully before judging texture. A warm cookie is not a reliable picture of the next day’s bite.
- Describe the result with measurable details: diameter, edge color, center thickness and firmness.
The baker’s note
Do not reduce sugar dramatically and expect every other property to stay unchanged.
Practice
Write a one-sentence texture goal and a baseline observation.
Technique lessons may require a separate complete formula. Read the full path before mixing.
