Lesson 3 of 4
Portion and chill deliberately
Portion control makes bake times and serving sizes more predictable.
Ingredients for this learning path
- A complete cookie formula
- Its specified flour, sugar, fat, eggs and inclusions
Equipment
- Scale
- Portion scoop
- Light-colored baking sheet
- Cooling rack
The lesson
- Weigh several scoops to confirm the tool gives the intended portion size. Recheck after changing dough or inclusions.
- If the recipe calls for chilling, cover the dough and record the duration and shape in which it was chilled.
- Bake one test cookie before a full tray when changing portion size, dough temperature or the oven.
The baker’s note
A large cookie may need a different bake time from a small one even with identical dough.
Practice
Compare two consistently weighed portions after the same bake.
Technique lessons may require a separate complete formula. Read the full path before mixing.
