The cinnamon roll ritual

Use tangzhong, develop an enriched dough and proof rolls with confidence.

LESSON 4 OF 4 · 8 min read

Bake & make it your own

A fully proofed roll rises gently in the oven instead of tearing apart.

Let’s work through it

  1. Bake at 350°F for approximately 25–35 minutes, until golden and the center rolls are cooked through. Tent loosely if browning too fast.
  2. For a simple glaze, mix powdered sugar with a little milk or water and vanilla until pourable. Glaze warm rather than piping hot rolls.
  3. Pumpkin purée adds both moisture and solids. Develop it as a separate formula by reducing other liquid and testing small batches; adding it directly to this dough will change the texture.
  4. For pumpkin-spice flavor without changing hydration, use a pumpkin-spice blend in the filling. Label it accurately if it contains no pumpkin.

LEARN IT. TRY IT. MAKE IT YOURS.
