Lesson 1 of 4
Design a balanced flavor
Every addition changes more than taste.
Ingredients for this learning path
- A familiar base bread formula
- Nuts, seeds, herbs or dried fruit
- Mature healthy 100%-hydration discard
- Flour, egg, milk, butter, sugar and baking powder for pancakes
Equipment
- Scale
- Mixing bowl
- Griddle
- Notebook
The lesson
- Choose one main flavor and one supporting note. Rosemary and roasted garlic is a clear starting direction.
- Classify ingredients by what they add: moisture, fat, sugar, salt or dry solids. Moist vegetables affect dough differently from toasted nuts.
- Weigh additions and test a small batch. A heavily loaded loaf needs different handling than plain bread.
The baker’s note
A clear flavor with good texture is more memorable than a crowded ingredient list.
Practice
Design one loaf and list the effects of every inclusion.
Technique lessons may require a separate complete formula. Read the full path before mixing.
