Lesson 4 of 4
Turn a good experiment into a recipe
A signature bake becomes repeatable when the details leave your memory and reach the page.
Ingredients for this learning path
- A familiar base bread formula
- Nuts, seeds, herbs or dried fruit
- Mature healthy 100%-hydration discard
- Flour, egg, milk, butter, sugar and baking powder for pancakes
Equipment
- Scale
- Mixing bowl
- Griddle
- Notebook
The lesson
- Record weights, starter hydration, dough temperature, rise targets, shaping method and bake conditions.
- Write sensory cues beside approximate times so another baker knows what to observe.
- Repeat the formula before increasing batch size. Large dough masses heat and cool differently.
- Record allergens and ingredients accurately if sharing the bake. A flavor name should reflect what is actually included.
The baker’s note
Your most useful recipe is the one someone can follow without needing to guess.
Practice
Write a complete one-page version of your best test bake.
Technique lessons may require a separate complete formula. Read the full path before mixing.
