Lesson 4 of 4
Tune your oven routine
An intentional bake combines initial heat, moisture and a dry finish.
Ingredients for this learning path
- A familiar fermented bread dough
- A little bench flour
- Rice flour for the basket, optional
Equipment
- Bench scraper
- Round or oval proofing support
- Sharp scoring tool
- Suitable covered bread pot
- Oven mitts
The lesson
- Preheat according to the formula and cookware instructions. Confirm that all handles, parchment and lids tolerate the planned temperature.
- Bake covered for the initial expansion stage, then uncover to brown and dry the crust. Release steam with care.
- If the base burns before the top browns, review rack position, pan material and heat shielding suited to your oven.
- Cool on a rack and evaluate after at least two hours for a full loaf.
The baker’s note
Change the rack or bake duration separately so you can tell what helped.
Practice
Write a repeatable preheat, covered-bake, uncovered-bake and cooling sequence.
Technique lessons may require a separate complete formula. Read the full path before mixing.
