Let’s work through it

  1. Whisk 250 g flour, 110 g brown sugar, 10 g baking powder, 3 g salt and 2 g cinnamon. Separately whisk 2 eggs, 180 g milk and 80 g neutral oil.
  2. Combine wet and dry just until moistened. Fold in 150 g finely diced apple and 50 g chopped walnuts. Divide among 12 lined muffin cups.
  3. For crumb topping, rub together 40 g flour, 30 g brown sugar and 25 g cold butter. Sprinkle over the batter.
  4. Bake at 375°F for approximately 20–25 minutes, until the centers spring back and a tester comes out without wet batter. Rest 5 minutes in the pan, then move to a rack.
