Choose flour by the bake you want and adjust water through observation.

LESSON 1 OF 4 · 6 min read

Choose flour for the job

Different bakes ask different things of their flour.

Go to guided practice & lesson check

Let’s work through it

  1. Use bread flour as a starting point for structure in artisan loaves and chewy bagels. All-purpose flour often suits tender muffins, scones and biscuits.
  2. Protein numbers are a clue, not a complete prediction of performance. Brand, wheat type and milling also matter.
  3. Compare flour in a familiar formula before buying a large quantity for production. Record the bag label and lot if you need repeatability.

LEARN IT. TRY IT. MAKE IT YOURS.
