The flour & water studio

Choose flour by the bake you want and adjust water through observation.

LESSON 4 OF 4 · 6 min read

Blend whole grain gradually

Whole-grain flour changes flavor, water needs and dough structure at the same time.

Go to guided practice & lesson check

Let’s work through it

  1. Begin by replacing a modest portion of the flour in a familiar loaf, such as 10–20%, while keeping total flour constant.
  2. Rest the mixed dough before deciding it needs more water. Bran and different milling styles can change absorption.
  3. Compare rise and texture after a full bake. Increase the proportion only when you understand how your chosen flour behaves.

LEARN IT. TRY IT. MAKE IT YOURS.
