Lesson 2 of 4
Mix just enough
Tender batter needs even distribution without unnecessary mixing after flour is wet.
Ingredients for this learning path
- A complete muffin or quick-loaf recipe
- Its specified flour, liquid, eggs, fat and leavening
- Fruit or nuts only as specified
Equipment
- Scale
- Two mixing bowls
- Spatula
- Muffin pan or loaf pan
The lesson
- Combine dry ingredients thoroughly in one bowl and wet ingredients in another. Break up leavener lumps before adding liquid.
- Fold wet into dry just until no large dry pockets remain. Scrape the base and sides where hidden flour collects.
- Fold inclusions in with a few final strokes. Lumps from ingredients are different from unmixed pockets of flour.
The baker’s note
A smooth, elastic batter may mean more mixing than this type of bake needs.
Practice
Record the number of broad folds needed to combine one small batch.
Technique lessons may require a separate complete formula. Read the full path before mixing.
