Lesson 4 of 4
Move between pans thoughtfully
A deep loaf and a small muffin cook through at different rates.
Ingredients for this learning path
- A complete muffin or quick-loaf recipe
- Its specified flour, liquid, eggs, fat and leavening
- Fruit or nuts only as specified
Equipment
- Scale
- Two mixing bowls
- Spatula
- Muffin pan or loaf pan
The lesson
- Use the stated pan and portion weights for a baseline bake before changing formats.
- When adapting, leave room for rise and expect a different bake duration. Do not simply reuse muffin timing for a deep loaf.
- Judge the center as well as color: use the recipe’s doneness cues and cool according to the method before slicing.
The baker’s note
A browned top can hide wet batter beneath it.
Practice
Write a pan-change test plan that keeps enough batter for one small trial.
Technique lessons may require a separate complete formula. Read the full path before mixing.
