Lesson 2 of 4
Portion equal wedges
Equal thickness matters as much as equal weight.
Ingredients for this learning path
- A complete scone recipe, such as the academy almond-vanilla practice formula
- Cream or wash only as specified
- Dry inclusions as specified
Equipment
- Scale
- Scraper
- Baking tray
- Pastry brush
The lesson
- Pat the dough into an evenly thick disc or rectangle without compressing it aggressively.
- Cut cleanly with a sharp scraper. Weigh portions if consistency matters, making small adjustments without repeated kneading.
- Space pieces evenly and chill as directed before baking. Keep the dough covered during rests.
The baker’s note
A thick center and thin point will bake at different speeds.
Practice
Measure or compare the thickness of three portions before they go on the tray.
Technique lessons may require a separate complete formula. Read the full path before mixing.
