Lesson 3 of 4
Shape with intention
Shaping creates a supported loaf without squeezing away all the air you worked to develop.
Ingredients for this learning path
- 500 g bread flour
- 350 g water, plus up to 10 g if needed
- 50 g ripe stiff starter (50% hydration)
- 10 g fine salt
Equipment
- Digital scale
- Mixing bowl and cover
- Straight-sided container
- Bowl scraper
- Lined bowl or banneton
- Oven-safe covered bread pot
The lesson
- Turn dough onto a lightly floured bench. Fold the edges inward, turn seam-down and use a scraper to round gently. Rest 20–30 minutes under a light cover.
- For a boule, fold the edges into the center again, turn seam-down and drag gently against the bench to tension the surface. Stop before the skin tears.
- Place seam-up in a rice-floured lined bowl or banneton. Cover and refrigerate 8–16 hours. Chill sooner if dough is already very puffy; a refrigerator slows fermentation rather than stopping it instantly.
The baker’s note
If dough spreads dramatically, revisit fermentation and gluten development before adding more flour at shaping.
Practice
Notice whether the surface holds light tension after shaping.
Technique lessons may require a separate complete formula. Read the full path before mixing.
